Quick French Carrot Salad

French Carrot Salad
PREP: 5 minutes | MAKES: 4 servings
5 medium carrots peeled and grated
1 teaspoon red wine vinegar (or apple)
2 tablespoons Dijon mustard
2 tablespoons olive oil
salt and pepper to taste
In a large salad bowl, mix carrots, vinegar, mustard, and olive oil well. Season to your tastes and serve. Yes - it is that simple
To give it a Moroccan feel, add 1 tablespoon each of chopped fresh mint and fresh parsley, 1 teaspoon sugar, and a pinch each ground cinnamon and cumin.
